Ingredients
3 cups Potato, mashed
1 cup Mozzarella, shredded
2 Tbs Chives, sliced
0.5 tsp Garlic Powder
Salt And Pepper, to taste
2 eggs, beaten
2 cups Panko Crumbs
Oil, for frying
Instructions
In a large bowl, add mashed potatoes, cheese, chives, garlic powder, salt and pepper. Stir until well combined.
Place eggs and panko breadcrumbs in separate bowls. Use an ice-cream scooper to create balls of the mashed potato mixture, and roll with your hands until a smooth ball is formed.
Place each ball first in egg and then in panko, making sure it’s completely coated. Repeat until all mashed potatoes are used.
Heat oil in a large heavy-based frypan over a medium to high heat. When oil is hot, fry potato balls in batches for 2-3 minutes until golden brown on all sides. Drain on a paper towel, season and serve immediately.
