Insanely yummy fried mashed potato balls

Ingredients

  • 3 cups Potato, mashed
  • 1 cup Mozzarella, shredded
  • 2 Tbs Chives, sliced
  • 0.5 tsp Garlic Powder
  • Salt And Pepper, to taste
  • 2 eggs, beaten
  • 2 cups Panko Crumbs
  • Oil, for frying

Instructions

  1. In a large bowl, add mashed potatoes, cheese, chives, garlic powder, salt and pepper. Stir until well combined. 
  2. Place eggs and panko breadcrumbs in separate bowls. Use an ice-cream scooper to create balls of the mashed potato mixture, and roll with your hands until a smooth ball is formed. 
  3. Place each ball first in egg and then in panko, making sure it’s completely coated. Repeat until all mashed potatoes are used. 
  4. Heat oil in a large heavy-based frypan over a medium to high heat. When oil is hot, fry potato balls in batches for 2-3 minutes until golden brown on all sides. Drain on a paper towel, season and serve immediately.
