Andie's Moist Banana Cake

Don't throw those mushy bananas away. This very easy recipe has made a banana lover out of my children!

Ingredients

  • 250 g Butter
  • 2 cups Flour, sifted
  • 2 cups Sugar
  • 4 large egg
  • 3 cups Banana, mashed
  • 1 tsp Baking Soda
  • 1 tsp Vanilla
  • 1 tsp Baking Powder
  • 0.5 tsp Salt
  • 4 Tbs Milk
  • 1 cup Walnut, optional, chopped

Instructions

  1. Cream butter and sugar until the mixture is fluffy.
  2. Add eggs, one at a time, followed by vanilla, milk and salt.
  3. Fold in the mashed bananas, flour, baking powder, nuts if using and bicarbonate of soda.
  4. Pour into greased cake tin and bake at 180C for one hour.
